Happy New Rear!!!!!

No, that’s not a typo. My greeting for today is Happy New Rear, not because I have a new rear but because I intend to have one by the end of this year. Well, maybe not a new one but certainly smaller than the one I’ve got now.

Ok so it’s been a couple of months since I posted and I feel terrible about that. A lot has happened and it’s been more of a roller coaster than anything. First off, we found out my mom had cancer, followed by surgery to remove said cancer and a PET scan to confirm there was no other cancer. So good news, the surgery was successful and the PET scan didn’t find anything else. W00T! Then we had the shock of just how much Chemo costs if you don’t have insurance. YIKES! Just in time for Christmas though a miracle happened and the chemo costs were greatly reduced. YAY! Mixed in with all this, I was hired as a consultant for a project at a great company. Unfortunately this meant that I was sitting more than I normally do and found it hard to work out because I was soooo tired. I put on a few pounds and that was tough. Now I am nearing the end of my contract with them and am finally getting adjusted to the new schedule just in time for it to be over. I am not so secretly hoping my contract gets extended because the company is awesome and the money is definitely nice.

Ok now that you are caught up on what’s been happening with me, let’s talk goals. As many of you know I don’t believe in making resolutions because resolutions tend to be temporary and often forgotten in a few weeks. I prefer to make goals. There are a lot of goals that I have in mind but the ones I’m going to post here are all related to getting that new rear. So without further delay, my 2012 goals.

  1. Workout  ≥1 hour a day
  2. Burn ≥1300 calories through diet and exercise
  3. Take vitamins
  4. Drink 2 cups (16oz) of green tea
  5. Eat 1200-1500 calories a day
  6. Weigh and record on spreadsheet
  7. Walk 1200 Miles in 2012
  8. Run at least 5 races
  9. Incorporate a lot more veggies into my eating
  10. Get to the gym ≥3 days a week

They may seem like resolutions but they really aren’t. The difference is, I don’t expect to do all of these perfectly everyday. I expect to work towards making each of these a habit. It will take me a while and there will be stumbles but I will get there.

Ok enough of this post for now. I’m going to go get ready to make some yummy Salmon for dinner.

Yummy Breakfast Taco

This morning I was looking for something different to make for breakfast. I had recently picked up some Mission Blue Corn and Flaxseed Tortillas and wanted to use them in my breakfast. So without further adieu I give you my creation.

Blue Corn and Flaxseed Breakfast Taco

1 Blue Corn and Flaxseed Tortilla
2 Egg Whites, beaten
1 Morningstar Farm Breakfast Sausage Patty, crumbled
1/4 cup Green Bell Pepper, diced
1/8 cup Kraft Pepper Jack Cheese

Spray pan with cooking spray and saute the bell peppers until crisp tender. Add in the breakfast sausage and egg whites and scramble. Remove from pan and place the tortilla in the pan and top with cheese. Heat tortilla until crispy and the cheese is melty. Place the scramble back on top of the tortilla and then slide the whole thing onto a plate. Gently fold in half and enjoy!

Easy Peasy Black Bean Soup

Tonight for dinner I made Black Bean Soup. I hadn’t made it before so I had to get a little creative and it turned out wonderfully. If you are on a low sodium diet, this is probably not the recipe you want to follow as it uses canned black beans.

Black Bean Soup

3 Cans of Black Bean Soup, undrained
2 Cans of Diced Tomatoes with Green Chilies, undrained
1 Can of Corn, drained
1/2 cup diced onion
1/2 cup chopped celery
1/2 cup chopped carrots
2 cloves garlic
chili powder to taste (optional)
2 Tbsp Canola or Olive Oil

In a dutch oven, heat oil over medium heat and toss in the onion, celery, and carrots. Peel the 2 cloves of garlic and grate them into the pan using the smallest grate possible. A zester works great for this. Watch you fingers! Cook the onion, celery, carrots, and garlic until tender, roughly 15 minutes, stirring occasionally. Once tender, pour in the black beans, tomatoes, and corn. Remember, only drain the corn, everything else goes in liquid and all. Bring to boil over high heat. Add chili powder if desired. Reduce heat to medium once boiling to simmer for 20ish minutes. Stir occasionally. Enjoy!

I forgot to take a picture but I’ll try to remember to take one next time and add it to this post. This soup is extremely filling so keep that in mind and don’t eat 2 pieces of cornbread like I did. I’m stuffed! 😀

Ohh less than 2 months to go!

Ok so it’s been about a month since I was here last. I’m horrible about putting up new posts but so much has happened that now I’ll make sure to try to fill everyone in.

Ok first off let me say that I have made it to W3 on the C25K program. Yes folks, I’m actually becoming quite the runner. In fact, I don’t even just run on the days I’m supposed to for the program. I find myself walk and jogging 5-6 times a week and love it. My waist line is loving it as well. More on that in a minute though.

Oh! I have been very good have not gone out to eat in almost 6 weeks. I know right! That’s quite the accomplishment. I’m also becoming quite the vegetarian cook. I did break down last weekend and have an actual hamburger but it didn’t have cheese on it. I topped it with Guac and Salsa instead. I’ve also fallen in love with MorningStar Farms Buffalo Chik’n wings. Ok, they aren’t really wings more like spicy nuggets but you can use them for some many yummy meals like wraps, quesadillas, salads, and of course just by themselves. Yep, those are a winner! I haven’t gotten brave enough to try to cook with Tofu yet but I’m getting there. I made a killer meatloaf the other night and it got rave reviews from my hubby, mom, and sister.

On a completely random note, my snoring cat is distracting me.

More good news, I’m the lowest weight i have been since 2007. Yay me! In fact, I’m actually wearing one of the shirts I bought in October 2007 right now. My jeans are getting a little big on me too! Oh and the pants I bought to wear on the plane in November now button and zip. I just need to lose maybe another 10 pounds and they’ll be perfect. Hmm, just realized I’m under growing my clothes faster than I’m replacing them. I may have to buy a couple of outfits soon. Well, really I’ll just need pants because my shirt size isn’t changing as fast as my pant size.

Speaking of pant size. I lost 2 inches in my hips and 1 inch in my waist since the beginning of October. Unfortunately Franken leg is starting to look more pronounced but since there is nothing I can do about that, I’m just ignoring it. So my weight as of this morning is 236.8. I’m definitely not going to make Onederland by my birthday but I’m hoping to at least get to 219 by then. Hopefully sometime around Valentine’s Day I’ll hit 199. I’m not stopping though until I’m well below there. 199 is just my first big goal. I plan on getting down to 150. Ohh I just realized that means I officially have less than 100 pounds to go! W00T!  In fact, I have less than 90 pounds to go. YAY!!!!

Ok so I heard some bad news this week that I can’t share at the moment. Hopefully in a week or so I can share the bad news and follow it up with what I hope will be great news. More to come on that. Just suffice it to say that right now, running and eating right have become a very important outlet for me.

Oh man, I almost forgot to tell everyone that hubs and I are going to be running in a Turkey Trot on Thanksgiving in Oklahoma City. We are quite excited. It’s a little bit of a sour note for me in the fact that I was supposed to be running my half-marathon on the 20th but since I went and broke my foot earlier this year, that’s clearly out. 

Well, I should probably close this crazy post. Before I go though, on the extremely remote chance that whoever stole my husbands weather station transmitter from our back yard is reading this. Really?? I mean seriously, what possible use do you have for that? You need the receiver to make it work which we have. Just return it by gently tossing it over our fence. I just bought that for him 2 months ago and now it’s useless without that piece. Do the right thing….

89 days to go…..

First off let me say that I wasn’t supposed to see my doc until November 3 but my appointment got moved up to today so I lost a month. Ok so good news is, I had lost 10 pounds since I saw her last. Bad news is that was the 10 pounds of water weight I had put on before I saw her last and got my presciption refilled. So really, I maintained since I wouldn’t have put on the 10 pounds in the first place if I had watched my refills more closely. I’m not going to complain to much though since I didn’t gain any weight and technically I wasn’t really eating all that great or exercising as much.

I have 89 days to go until I turn 35. This is a big thing for me because I refuse to turn 35 with a 2 in front of my weight. In order to remind me what I’m fighting for, I hung my 5k medal from my rear view mirror in my van. My goal is totally doable as long as I do what I’m supposed to do. No more finding occasions to eat out. No more saying I’ll workout tomorrow because tomorrow tends to never come. I owe it to myself to not just wish for a healthier lifestyle but to actually give myself a healthier lifestyle.

Mushroom Pizza Pie – Yummy!

So I tried a new recipe tonight and thought I would share. I made a few changes to the original recipe mainly because I made a couple of mistakes that turned out to be wonderful.

Adapted from the Mushroom Pizza Pie recipe found in the Betty Crocker Easy Everyday Vegetarian cookbook.

2 cans (4oz) mushroom pieces and stems, drained
1 cup chopped onion
1/3 cup grated parmesan cheese
1/3 cup shredded mozzarella
1 1/2 cups milk
3 eggs
3/4 cup Original Bisquick mix
1 cup pizza sauce
1/4 cup grated parmesan cheese
1 bell pepper chopped (about 3/4 – 1 cup)
1 1/2 cups shredded mozzarella

  1. Heat oven to 425. Spray 10 inch deep dish pie plate with non stick spray. Mix mushrooms, 2/3 cup onion, 1/3 cup parmesan cheese, and 1/3 cup mozzarella cheese in a small bowl. Sprinkle mixture in bottom of pie plate.
  2. Beat Eggs, Milk, and Bisquick mix until smooth, about 15 seconds. Pour over vegetable mixture.
  3. Bake uncovered 20 minutes. Spread pizza sauce over top. Top with remaining ingredients. Bake 15-20 minutes longer or until cheese is golden brown. Let stand 5 minutes before cutting.

I really need to start using my actual camera to take pictures and not my iPhone but at least you get the general idea of what it should look like. One final caution, the pie plate will be very full so you probably want to put something under it just on the off chance it spills over the sides. You could probably also make this in a casserole dish which might be a little deeper. I might try that next time.

Frustration and Renewal

Imagine this, you walk up to the counter and Starbucks, order your favorite drink, and have the person behind the counter look at you with a completely blank look. You try it again only to have the same result. You keep trying to order your Grande White Chocolate Mocha with 4 pumps White Chocolate and 4 pumps Toffee Nut only it never gets made. No matter who you talk to or how you order it you never actually get your drink. This is the stuff that nightmares are made of, at least lately it is. You see, I’ve been having basically this same kind of dream for a week or so now. It always involves Starbucks and it always involves me not being able to get whatever I’m ordering. On the surface it may sound funny but look deeper and you’ll see a pattern of frustration emerging.

Frustration is a funny thing. You can start out being frustrated with one thing and before you know it you are frustrated at everything. It has an uncanny knack for snowballing. To get rid of the feelings of frustration, I have to go back to the source. To bad I can’t remember what it was that I was originally frustrated over. I’m sure it was either weight, housekeeping, or finances. Those three usually seem to be the root of all evil. Interestingly enough, they are generally intertwined. Think about it, your weight starts creeping up which makes you feel crummy so the house doesn’t get as good a clean as it should. Then because your house is looking bleh, you go buy a pillow or something to make it look better even though decorating wasn’t in the budget. Perhaps you start to eat out so you add to the pile of dishes in the sink. Whatever your vice, it probably requires you to spend money that wasn’t planned.  The nice thing is, if you can see the signs before it gets to that point, you can stop it. That’s where I am now. I’ve passed the frustration mark with the weight and housekeeping. Next stop is buying a pillow. Ok so I won’t really buy a pillow. I will however, be more mindful of what’s happening and reverse course.

There are three simple things I can do today to start undoing the frustration damage and it will all take less than 60 minutes to do.

 Action #1 – Eat a healthy breakfast.
Action #2 – Hop on the treadmill or go for a walk outside for 30 minutes.
Action #3 – Clean my kitchen sink.

Well, I have a lot to do today so I better wrap this up and start working out my frustration. I’ll update later and let you know how I’m doing.
